I posted a picture of one of my Whole30 meals on Facebook earlier this week that included Sweet Potato Rice. People were intrigued, so I promised to post a video tutorial on how to make it using my new favorite, must-have kitchen tool. The Spiralizer.
I should mention, I mistakenly bought a knock-off version of The Spiralizer. It does great with zucchini noodles, but I have to woman-handle it when spiralizing sweet potatoes (as you’ll see in the video). Buy the real deal. Speaking of the video, this is my first attempt at a Vlog post. As you can tell by electronics plugged in throughout the kitchen, empty lunchboxes waiting to be filled, etc., I didn’t put a whole lot of effort into tidying up the place for this epic event. My videographer (um…husband) also seemed a bit under enthusiastic at the task-at-hand. Having said that, it does provide a good idea of how quick and easy it is to make sweet potato rice. Even if he refused to let me do retakes.
As with most of my cooking, I make a helluva lot at once. Go big or go home. Just be sure to add the spiralized sweet potatoes to your food processor in small batches.
So here goes:
Sweet Potato Rice | Print |
- 3 Large Sweet Potatoes (Yams)
- ¼ Cup Mushroom Broth (or Bone Broth)
- Peel and spiralize sweet potatoes.
- Pulse the spiralized sweet potatoes in a food processor until they are the consistency of rice.
- Microwave covered for 4 minutes until tender.
