From My Mom on Mother’s Day

happy-mothers-dayThe most significant Mother’s Day for me was 21 years ago when my mom wrote ME a card.  I remember feeling guilty that she had taken time to honor me on a day that was supposed to be all about her.  Now that I’m a mother, I understand the joy in celebrating my own children on Mother’s Day and how privileged and blessed I am to be their mom. Girls’ Weekend Countdown

Girls WeekendThe countdown to Girls’ Weekend 2014 has officially begun!  It’s an annual pilgrimage to a land of plenty, only to be rivaled by the great wildebeest herds of Africa.  In less than 48 hours, I will be aboard a plane to Phoenix.  Is it selfish that I’m choosing to spend Mother’s Day Weekend away from my children?  For sure.  But it is good for the mind and good for the soul.  (And truth be told, it was the only weekend that coordinated with everyone’s schedules).  I look forward to returning with fully charged batteries, a sun-kissed nose, and memories to keep me afloat until the next weekend away.  What a great Mother’s Day gift after all…beats a pendant from the Open Heart Collection. Be the Change

Chocolate Easter RabbitI read a lot of information on the state of health and wellness in our country.  I’ve read books that have changed the way I eat.  I follow blogs that influence how I cook for my family.  I even switched brands of deodorant this morning after reading this post It’s something I am passionate about and I see a need for change in how we think about food.

But I read an article over the weekend that provided such sobering statistics that it stopped me in my tracks.  It was written by Robyn O’Brien for Prevention and discussed the shift to eating organically as a way to reduce exposure to certain toxins in our food supply.  There's more…

The Monokini

Target MonokiniThe most exciting thing I’ve bought this month?  This H-O-T monokini from Target.  I seriously did it, ladies.  I paid $29.99 for this ridiculous bathing suit that has had me laughing for two full weeks. (As a side note, I’m just glad this Target model has her crotch in-tact).

Background:
I was casually perusing the aisles of Target when this suit caught my eye.  I did a double-take. Because it was truly unbelievable and totally picture-worthy.  So I took a photo and posted it to my personal Facebook page asking who was going to be the first mom to sport it at our community pool.  The post had 18 Likes and 22 (HI-larious) Comments. Recipe: Easy Chicken Marinades

Honey Glazed ChickenIt’s that time of year again – GRILLING SEASON!  I love the no-mess convenience of cooking outside.  Preferably while drinking a glass of chilled Pinot Blanc.

Here are three chicken marinades that are quick and easy.  Making your own marinade is a simple way to avoid added sodium and processed ingredients like high fructose corn syrup and partially hydrogenated oils that are often found in the bottled kind.  You’ll be pleased with how much flavor the fresh herbs and spices add to the meat. My Life in Facebook Posts

FacebookI am once again participating in Mama Kat’s (Pretty Much World Famous) Writer’s Workshop.  She’s a funny gal and I’m particularly fond of her most recent vlog post on the Vanilla Vodka ChaiCheck her out.

Over the past six years, I have documented my life on Facebook. Mostly the comical parts – because good or bad, that’s what I want to remember. Motherhood makes me HaPpY (and tired).  My boys make me HaPpY (and tired).  And looking back at Facebook posts over the past five years makes me HaPpY (and tired).  Here are some of the highlights – though some may consider them lowlights – of my wonderfully fun and poop-filled life. Recipe: Cauliflower Pizza Crust

CauliflowerThere are a lot of recipes out there for Cauliflower Pizza Crust. A. LOT.

I love the idea of healthy toppings piled on a crust made of vegetables. But perfecting the crust has taken a few tries.  It’s never going to taste like the buttery crust from your favorite pizzeria. Because it’s still cauliflower, after all. However, I have found a recipe that my family loves.  And it makes dining in for pizza a lot healthier than ordering out.  It’s packed-full of vitamins and antioxidants – and is so flavorful.  And super healthy. Recipe: Pulled Pork in a Crock Pot

Pulled PorkI recently made Lisa Leake’s (100 Days of Real Food) Pulled Pork in a Crock Pot.  It’s listed among her Most Popular Posts and it’s evident why it has gotten so much love.  It’s amazing.  AMAZING.  And simple, quick in a pinch.

Have you taken the time to look at the list of ingredients on a bottle of barbecue sauce?  You will be pained to find one without High Fructose Corn Syrup. And if there’s not HFC, there is added sugar, along with other questionable ingredients starting or ending with “X.”  Who wants spoonfuls of sugar as dinner (besides your kids and their dentist)? Read labels and remember that sugar comes in many forms.  A good rule of thumb is to look for the words “sugar,” “syrup,” or anything that ends in “-ose,” and try to stay away from it. There's more…

Recipe: Roasted Garden Vegetables

Roasted VegI love vegetables. Raw, steamed, roasted, fried…I really can’t get enough. So the latest news on the positive effects of fruit and vegetables on lifetime longevity made me happy.  A study in BMJ specifically found that vegetables offer more protection than fruit stating “each additional serving of vegetables was linked to a 16% reduction in mortality, compared to 10% for fruits.”  Obviously, it’s not rocket science.  But it does offer good reason to share this recipe for Roasted Garden Vegetables.
