What is Broth?

  • 1 whole chicken, cut up (34 pounds)

  • 1/8 teaspoon black pepper
  • 1/8 teaspoon salt
  • 1/8 teaspoon parsley
  • Dash of paprika
  • 3/4 cups milk
  • 1/4 cup + 2 tablespoons flour

Dumpling Ingredients:

  • 2 cups flour
  • 1 cup milk (whole milk)
  • 1 Tablespoon baking powder
  • 3 Tablespoons butter, softened
  • 1/2 tsp. salt

Instructions

  1. Place chicken in a large pot with celery, carrots, parsley, thyme, poultry seasoning, salt and pepper to taste. Cover with 8 cups of water.
  2. Simmer for one hour, until tender. Remove the chicken and cool enough to remove the meat from the bone.
  3. Return chicken meat to pot and broth.
  4. Make the cream of chicken soup by boiling in a medium-sized saucepan: the 3/4 cups additional chicken broth, 1/2 of the milk, and the seasonings for about 2 minutes.
  5. In a bowl, whisk together the remaining milk and flour. Add to boiling mixture and continue whisking briskly until mixture boils and thickens.
  6. Add the cream of chicken soup to the chicken meat and broth in the large pot and simmer gently.
  7. To make the dumplings mix flour, baking powder and salt. Work in the butter with fingertips. Gradually add the milk.
  8. Roll into golf ball sized balls, then flatten to 1/2 inch thickness.
  9. Drop carefully into the hot broth and simmer the chicken and dumplings 10 minutes longer, making sure to ladle broth over the dumplings to submerge them as they cook.

Notes

You many substitute one can of cream of chicken soup in place of the homemade version. If you decide to do this, skip steps #4 and #5. We recommend trying it at least one time with the homemade version.

Ingredients

  • Your favorite tomatoes or 28 oz. of Crushed or Stewed Tomatoes in a can
  • 4 cups of water OR tomato-based cooking liquid
  • 2 tablespoons olive oil
  • 1 medium onion
  • 2x celery stalks
  • Salt and Pepper
  • A sprinkle of cayenne and paprika
  • 1 teaspoon dry basil
  • 4 cloves of garlic
  • 1 tablespoon of sugar
  • 50125mls of heavy cream

Instructions

As a base recipe, we will be using fresh tomatoes to create our bisque.

  1. First, wash and rinse your tomatoes thoroughly. Dry and then cut a little X in the bottom of each tomato.
  2. While the water is at a low boil, add the tomatoes and wait until the skin starts to come off before peeling them and adding them to your Dutch oven or stock pot.
  3. Next, place the tomatoes in a dish of iced water to blanch them. Once the skin has separated from the flesh and the tomatoes are cool to the touch, you can peel the skin off.
  4. Save four cups of the tomato-based cooking liquid because we'll use it to make the bisque's stock.
  5. Dice the two celery stalks, four garlic cloves, and one medium onion.
  6. Turn the heat to medium-high and add two tablespoons of olive oil to the bottom of your stockpot or Dutch oven.
  7. Once the oil is hot, add the chopped vegetables and cook until the celery and onion are tender and transparent.
  8. Add the freshly peeled tomatoes or canned stewed or crushed tomatoes once the vegetables have softened.
  9. Then it's time to add our seasonings: a touch of cayenne and paprika, one teaspoon of dried basil, one teaspoon of sugar, and salt and pepper to taste.
  10. Stir well to ensure that everything is well combined, then pour in the four cups of tomato stock (If not using the fresh tomato method, use water). Then add two chicken bouillon cubes.
  11. To avoid burning, continuously stir the mixture while you bring it to a boil. Once it has reached a boil, reduce the heat and cover the pan with the lid. Let this cook for between 30 and 60 minutes.
  12. It's time to blend everything which has had a chance to boil and cook together. All ingredients should be well mixed in the same saucepan using an immersion blender. If using a conventional blender, cool the soup first.
  13. When the tomato bisque is smooth, you can pass it through a tiny sieve to further smooth it out. However, it is a matter of personal preference.
  14. After the tomato bisque is in the pot again, it's time to add the heavy cream. Finally, add 50 – 125mls of the heavy cream and stir.
  15. There you have it — a delicious homemade tomato bisque that is incredibly simple to make and perfect for a rainy day with your favorite grilled cheese toasty.

Instructions

1. In a large nonstick skillet, sauté the carrots, onion, and garlic in oil until tender.

2. Add chicken; cook and stir for 5 minutes.

3. Combine the flour, water, and wine or broth until smooth; add to the skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; stir in yogurt, peas, and seasonings. Transfer to a shallow 1 1/2 qt. baking dish coated with cooking spray; keep warm.

  • 1 20ounce package refrigerated diced potatoes with onions
  • 1 cup whole milk

Instructions

  1. In a large saucepan bring chicken broth to a boil.

  2. Add potatoes; return to boiling. Reduce heat.

2 tablespoons minced fresh parsley
1 large egg yolk
6 garlic cloves, minced
1½ teaspoons minced fresh oregano or ½ teaspoon dried
Salt and pepper
1 onion, minced
1 tablespoon extra-virgin olive oil, plus extra for serving
¼ teaspoon red pepper flakes
8 cups low-sodium chicken broth
8 ounces kale, stemmed and leaves sliced ¼ inch thick
6 ounces orzo (about 1 cup)

Directions:

1. Mash bread and milk into paste in large bowl using fork. Mix in meatloaf mix, Parmesan, parsley, egg yolk, 3 garlic cloves, oregano, ¾ teaspoon salt, and ½ teaspoon pepper using hands. Pinch off and roll mixture into tablespoon-size meatballs (30 to 35 meatballs total).

2. Microwave meatballs on large plate until fat renders and meatballs are firm, 3 to 5 minutes. Pour off fat and transfer meatballs to slow cooker.

3. Microwave onion, remaining 3 garlic cloves, oil, and red pepper flakes in bowl, stirring occasionally, until softened, about 5 minutes; transfer to slow cooker.

4. Add broth to slow cooker. Cover and cook until meatballs are tender, 4 to 6 hours on low.

5. Let soup settle for 5 minutes, then remove fat from surface using large spoon. Stir in kale and orzo, cover, and cook on high until kale and orzo are tender, about 20 to 30 minutes. Season with salt and pepper to taste and serve with additional Parmesan and olive oil.

1- 6 oz. can tomato paste
4- 16 oz. cans red kidney beans

Directions:

1. Heat shortening in skillet and brown beef, discard fat. Combine all ingredients in crock pot.

2. Cover and cook on low 8-10 hours; high 4-5 hours.
