Ingredients

  • 2 chopped green onions
  • 1 lb. bacon, cut into 1/2-inch strips. Alternatively, you can use bacon bits.
  • 1/2 teaspoon black pepper
  • 1 1/2 teaspoons salt
  • 1 diced yellow onion
  • 2 cups grated cheddar cheese, divided
  • 1 red bell pepper, diced
  • 3 cups diced potatoes
  • 3 cloves garlic minced
  • 1 cup of milk
  • 12 large eggs

Instructions

  1. First, spray a 9×13 baking dish with cooking spray and preheat the oven to 350 °F.
  2. Use a large skillet and, over medium heat, cook the bacon until nice and crispy, stirring now and again.
  3. Remove the bacon and set aside on a plate, then add the red pepper and onion and cook until tender. Add the garlic and cook for another 2 minutes, then set aside.
  4. Beat the eggs and whisk the milk in a large bowl. Add the potatoes, 1 cup of grated cheese, and the cooked veggies. Stir in the bacon, but keep ¾ cup aside. Add the salt and pepper.
  5. Next, pour the mixture into a baking dish and sprinkle with green onions and the rest of the cheese. Bake for 20 minutes, then sprinkle the rest of the bacon on top. Put the casserole back in the oven and bake for another 25–30 minutes, until slightly golden and the eggs are firm.
  6. Remove from the oven and allow the casserole to stand for 10 minutes, then cut into squares and serve warm.

This is a recipe the kids will definitely love. It’s easy to prepare, filled with protein and has a delightful salty flavor.


Ingredients

  • 2 chopped green onions
  • 1 lb. bacon, cut into 1/2-inch strips. Alternatively, you can use bacon bits.
  • 1/2 teaspoon black pepper
  • 1 1/2 teaspoons salt
  • 1 diced yellow onion
  • 2 cups grated cheddar cheese, divided
  • 1 red bell pepper, diced
  • 3 cups diced potatoes
  • 3 cloves garlic minced
  • 1 cup of milk
  • 12 large eggs

Instructions

  1. First, spray a 9×13 baking dish with cooking spray and preheat the oven to 350 °F.
  2. Use a large skillet and, over medium heat, cook the bacon until nice and crispy, stirring now and again.
  3. Remove the bacon and set aside on a plate, then add the red pepper and onion and cook until tender. Add the garlic and cook for another 2 minutes, then set aside.
  4. Beat the eggs and whisk the milk in a large bowl. Add the potatoes, 1 cup of grated cheese, and the cooked veggies. Stir in the bacon, but keep ¾ cup aside. Add the salt and pepper.
  5. Next, pour the mixture into a baking dish and sprinkle with green onions and the rest of the cheese. Bake for 20 minutes, then sprinkle the rest of the bacon on top. Put the casserole back in the oven and bake for another 25–30 minutes, until slightly golden and the eggs are firm.
  6. Remove from the oven and allow the casserole to stand for 10 minutes, then cut into squares and serve warm.

Ingredients

  • 1 large potato, thinly sliced*
  • 1 Tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

FILLING:

  • 1 1/2 pounds chicken tenderloins, cut into 1/2-inch cubes
  • 2 teaspoons olive oil
  • 1 medium onion, chopped
  • 1 Tablespoon butter
  • 2 Tablespoons all-purpose flour
  • 1 1/2 cups fat-free milk
  • 1/4 cup shredded part-skim mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 Tablespoons shredded reduced-fat cheddar cheese
  • 2 cups frozen peas and carrots
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried basil
  • Dash rubbed sage

CRUMB TOPPING:

  • 1 cup soft bread crumbs
  • 1 Tablespoon butter, melted
  • 1/2 teaspoon garlic powder

*Potato slices tested at 1/16 of an inch using a mandolin


Instructions

  1. In a large bowl, toss potato slices with oil, salt, and pepper.
  2. Arrange slices onto the bottom and sides of an 11-in. x 7-in. baking dish coated with cooking spray. Bake at 400° for 20-25 minutes or until potato is tender. Reduce heat to 350°.
  3. Meanwhile, for filling, in a large skillet over medium heat, cook chicken in oil until no longer pink. Remove from skillet.
  4. In the same skillet, sauté onion in butter.
  5. Stir in flour until blended; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened.
  6. Reduce heat; stir in cheeses until melted.
